Early morning hike to the radio towers. It was already warm by the time we started the climb but thank goodness for the breeze that rearranged our hair every step of the way. After that gruelling hike we couldn't wait to dig into these little babies; pumpkin-cornmeal griddle cakes from Marilyn Smith's new book called Healthy Starts Here! These are made with yoghurt and of course pumpkin so they are very soft but still have lots of texture thanks to the whole wheat flour, cornmeal, and wheat germ.
