Purple comfort

One of my favourite comfort foods is pasta with chick peas. First you have to soak the chick peas overnight. Then you cook them at a slow boil, change the water and boil them for at least an hour. In the meantime, make a thick tomato sauce with lots of garlic, onions, and parsley. Add the chick peas to the sauce. Cook your pasta ( I used Ditali) and reserve some of the water. Mix the tomato-chick pea sauce into the drained pasta and add some of the reserved liquid. Dish out and serve with lots of grated cheese.
My good friend shared some of her purple potatoes with us so Mr. Cowboy paired them with Ina Garten's meatloaf and added some roasted red peppers that we got from the Market. Very colourful and very good.

i'll have to try this one. i've always been hesitant about doing pasta fagioli because of it's depression origins, but yours looks yummy.

and i love purple potatoes!!

I'm confused, did you buy the peppers and then roast them yourselves? Or did you buy them pre-roasted at the market?
Also, I'm confused as to why you keep making such yummy food and yet don't send me any?? :P
